
Yakitori chicken skewers with miso

Ingredients
- 4 tbsp miso paste
- 2 tbsp sugar
- 4 tbsp mirin
- 250g chicken thigh fillets, cut into 2cm chunks
- 3 fat ones spring onions, cut into 2cm chunks
Method
- STEP 1
Soak wooden skewers in water for 15 minutes (or use metal ones). Mix the miso, sugar and mirin until the sugar dissolves. Thread the chicken and onions alternately onto skewers.
- STEP 2
Brush the skewers with some of the sauce, then grill until cooked through, brushing with more sauce as you go.
