Ingredients
- 250g mature cheddar
- 1 tsp English mustard
- 1 egg yolk
- a couple of good dashes Worcestershire sauce
- 1-2 tbsp Guinness
- 8 slices sourdough or other crusty bread
Method
- STEP 1
Put all the ingredients except the guinness and bread in a small processor and whizz, adding enough guinness to make a paste. Toast the bread then thickly spread on the rarebit. Grill until golden and bubbling.
